Wok assistance

Recently, I purchased a wok in hopes of making some killer stir fry. A friend of mine has a super fantastic teriyaki recipe but upon request, said friend decided it was a family secret and won't divulge. So, few readers, I look to you. Anyone have any amazing recipes for things I can make in a wok? I'm always hesitant to try new internet recipes just because I don't want to spend the money on ingredients that Bobby Jo from Newport says are good. At any rate, if you've got em, hook me up! I'll also take any other recipes if you have 'em (no Balut, Modo...barf).

My chopsticks are waiting...

The only recipe I have for stir fry involves Spam. Call if you want it. ;)

It's not stir-fry, but I have a kick-ass chicken enchilada recipe if'n ya' want. Simple, and oh-so-delish!

You may not really need a recipe for stirfry. If you have the basic ingredients (peanut oil, ginger, garlic, soy sauce are constants; rice wine, hot pepper sauce, and teriyaki are optional, and everything else, from vegetables to meat, if any, is a variable) and learn the technique, I wouldn't be surprised if you could improvise your own "family secret" stirfry that you wouldn't have to share with anyone else.

Check Food Network's website, particularly Alton Brown, for tips on how hot your wok should be (smokin') and what order to put ingredients in (some things cook faster than others).

I'd give you my stirfry recipes, but they vary from time to time depending on what I have on hand.

Teriyaki sauce!!! That's what I was trying to think of but couldn't recall the name. Darnit. Left a recipe on your Mom's blog for you. Switch the sauce as teriyaki is the right one, or better tasting, than soy sauce (to me anyway).

The beauty of stir fry is you can add just about anything. Mushrooms, any veggies, even mix in some mandarin orange slices after it's cooked.

Basic Teriyaki Sauce
1/3-cup brown sugar

2 tsp garlic powder
1 tsp ground ginger

2 cups tomato ketchup

1/2-cup soy sauce
1/3-cup cider vinegar
1½ tbsp Worcestershire sauce

Ok, no Bolut, but here are a few more of my favorite EZ stir fry combos.

Green bean Cashew Wok food

1 lb. green beans
2 tsp. sesame oil
1 clove garlic, crushed
1/3 cup cashew nuts
Trim green beans and then cut into 1-1/2 inch diagonal lengths.
Heat oil in wok or frying pan. Add garlic and cashew nuts.
Cook 2 minutes. Add beans, stir-fry 2-3 minutes,
or until nuts are golden and beans just tender.
Serve hot.


Asparagus stir fry

1 Tbs. Peanut oil (or sesame oil)
1 red bell pepper, seeded and cut into strips
1 lb. lean beef strips (can be pork or chicken or shrimp)
9 ounces frozen snow peas, thawed
1-1/2 lbs. frsh asparagus spears, cleaned
2 Tbs. lemon juice
1/2 cup peanuts, chopped
Add oil in a wok over medium high heat.
Sauté bell pepper, beef and snow peas 4-5 minutes.
Add asparagus and sauté another 2 minutes or until vegetables are tender.
Remove from heat and stir in lemon juice.
Season with salt and pepper to taste.
Serve sprinkled with peanuts.


Pineapple ginger shrimp

1-1/2 lbs. Peeled and deveined shrimp
2 tsp. peanut oil
2 cups fresh pineapple chunks
3 Tbs. molasses
2 Tbs. fresh lime juice
1/4 tsp. red pepper flakes
8 scallions, cut lengthwise into 2 inch pieces
1/4 cup crystallized ginger, minced
In a nonstick wok over high heat, warm oil.
Add shrimp and sauté until firm, about 3 minutes.
Remove shrimp and set aside.
Add pineapple and molasses to wok and stir-fry until
the pineapple is brown and tender.
Stir in the lime juice, red pepper flakes, scallions and shrimp.
Sauté until scallions are bright green.
Toss in ginger and serve over rice.

Again, stir fry is excellent for cleaning up left overs. One of my favorites is pizzawoky. Take left over pizza, dice it up, add a little oil to wok pre heat then throw in onion, pepper, left over pizza bits, rice, scramble an egg, pretty much any left over you want to add and you have a five minute meal.

Your mom sent me over, here is one I love that is easy peasy. Veggies and thinly sliced beef. And then I throw in that boxed butternut squash soup for the sauce (add some flour to thicken if you like) and garlic to taste. Yum.
